Abstract

The article explores innovative approaches to organizing an inventory management system in the restaurant business, taking into account the challenges of the modern market and trends in digital transformation. The elements of the inventory management system are characterized, namely: inventory planning, inventory accounting, purchasing, storage, inventory, monitoring and analytics. It is determined that effective inventory management is an important factor in ensuring the uninterrupted operation of restaurant business establishments, optimizing costs, improving service quality and creating competitive advantages. The impact of the implementation of digital tools, in particular ERP systems, warehouse management software (WMS), big data analytics (Big Data), Internet of Things (IoT) technologies, mobile applications and cloud services, on accounting accuracy, planning flexibility, timeliness of supply and reducing the level of write-offs is analyzed.

Special attention is paid to innovations in the organization of inventory processes, which allow for prompt detection of discrepancies, increased accounting transparency and staff responsibility. The advantages of implementing environmentally friendly practices are revealed, including the use of local products, waste recycling systems, energy-efficient equipment, and the development of partnerships with local suppliers. Strategies for the sustainability of restaurant business establishments taking into account environmental responsibility are highlighted.

It is established that the implementation of innovations is accompanied by certain difficulties, in particular financial barriers for small establishments, however, in the long term, such solutions ensure sustainable development, cost reduction, and improved business profitability. Areas of further research related to the development of artificial intelligence in inventory management and the adaptation of digital technologies for small businesses are proposed.
